Chicken Stew with Coppa Stagionata and Artichokes

A second dish fast to prepare and rich in nutrients.

  • 400gr Chicken breast
  • 100gr Coppa Stagionata Vitale
  • 2 Artichokes
  • 200ml Cream for cooking
  • Garlic
  • White wine
  • Olive oil
  • Salt and pepper

Cut the chicken breasts in medium-size cubes. Chop the garlic and put it in a pan with a leaf of olive oil. When it’s golden brown, lay also the artichokes cut in wedges and after a couple of minutes add the chicken cubes. Roast, simmer with white wine until reduced, add cream and let it cook for 20 minutes.

In the meantime cut Coppa Stagionata in thin slices and when the chicken is mostly ready, lay it in the pan and sauté all the ingredients together to make them gain flavor. Your chicken stew is ready to be served.
